AGEING
At
La Couspaude, the wine is aged for 16-20 months.in 100% new oak barrels.
Alain
Aubert has this to say about the importance of using new oak at La Couspaude:
"I am sure that this would not be the right choice for many other vineyards.
However, the naturally powerful and full-bodied wine at La Couspaude benefits
remarkably from being left to age in wood. This is possibly the best compliment
we could pay to La Couspaude".
Jean-Claude
Aubert adds, "The way we use oak is the result of long experimentation
and much careful tasting. We need to be very attentive to the quality
of oak we use.
This can vary a great deal, and the right degree of toasting is essential.
We insist on medium toasting. We have developed an excellent relationship
with our suppliers, who provide us with exactly the type of barrels we
are looking for".
Racking
is carried out traditionally every 3 months, using gravity flow. Fining
is done with egg whites.
Due
to the length of time the wine spends in barrel, there is no need to filter
it.
